There's nothing better than a cool and refreshing, fruit smoothie on a hot summer morning. This delicious coconut raspberry smoothie has a fresh fruity and tropical flavor that will brighten up your morning and make you feel ready to take on the day!
I love mixing it up using different kinds of milks and fruits. In this one I use coconut milk from a can. It has less sweeteners and thickeners and is typically cheaper than buying the coconut milk drink. The fats from the coconut milk are good healthy fats are also great at keeping you full for the whole morning! But you can also use coconut milk from the carton. Just use about 1 1/2 cups.
You can exchange the raspberries for any berries you wish. Strawberries and blueberries also work great and taste delicious with the coconut milk. I love adding a frozen banana for sweetness and it can replace the cup of ice. I keep a bunch of frozen and peeled bananas in the freezer, so that I can easily pop them into smoothies in the morning.
This smoothie is ridiculously easy to make. It has minimal ingredients and you only need a blender to make it happen! You also know where all the ingredients come from and can feel good about making it every day, just like my orange juilius smoothie!
You can turn this smoothie into a protein shake by adding a scoop of vanilla protein powder. You can also replace part of the coconut milk with some yogurt. This adds great probiotics, calcium, and a kick of protein! My husband loves drinking these shakes before work because they keep him full all morning and he can easily drink them in the car. It would be so nice to be able to enjoy a breakfast at the table but it so rarely happens in our house! We are lucky to grab a protein bar in the morning, so a smoothie is a nice refreshing treat for any busy morning!
Ingredients
- 1 can of coconut milk (light or regular)
- 1 cup of raspberries (frozen)
- 1/3 cup of orange juice (no pulp works best)
- 1 Tablespoon of honey
- 1 cup of ice ( you can also add a frozen banana)

Place the coconut milk, orange juice, honey, frozen raspberries, and ice in a large blender. Blend on high until the smoothie is totally smooth. If you use a frozen banana instead of the ice you don't need to add the honey.

Split the smoothie between two large smoothie glasses. Use a smoothie straw as it will be nice and thick! Garnish with fresh raspberries and serve immediately (it really only tastes good when it is still cold!)
