These nutritious and delicious almond flour banana muffins are the perfect snack for an afternoon pick-me-up or a quick and easy breakfast. The recipe calls for a cup of mashed, very ripe bananas—the riper the banana, the more concentrated the flavor and sweeter the muffin. It's a great way to use up bananas starting to go mushy.

Almond flour banana muffins are gluten-free, grain-free, sugar-free, and vegan. Instead of using an egg in this recipe, the moisture from the mashed bananas combines with ground flaxseed meal to create a binder that works like an egg. Using ground flaxseed adds wonderful flavor and texture and makes the muffins extra healthy.

You can make these in a mini muffin pan, which will yield 24, or you can prepare 12 standard size muffins, if desired—simply increase the bake time. Think of this recipe as a blank slate to add your own spin.

Can I Substitute Almond Flour for All-Purpose Flour in Muffins?

It is best to find recipes specifically formulated to be prepared with almond flour rather than simply swapping almond flour cup for cup with all-purpose flour. Almond flour is simply ground almonds, so it does not have the same properties (such as gluten) as all-purpose flour.

Why Did My Banana Muffins Not Rise?

Some muffin recipes contain leavening agents which help the muffins rise and create a round domed top. Make sure your baking powder and/or baking soda are not out-of-date and bake the muffin batter right after mixing.
