Ingredients

  • 8 cups brewed Japanese green tea

  • 1/2 cup cucumber, peeled, seeded, and pureed

  • 1/4 cup mint leaves, muddled and finely chopped

  • 1/4 cup freshly squeezed lime juice, from 2 large limes

  • Simple syrup, or another tea sweetener, optional and to taste

  • Cucumber slices, and fresh mint, for optional garnish

Steps to Make It

  1. Gather the ingredients.

  2. In a large pitcher or bowl, combine the green tea, cucumber puree, mint leaves, and lime juice. Sweet to taste, if desired.

  3. Cover the pitcher or bowl and chill the mixture for several hours.

  4. When the mixture is well chilled, strain the mint and cucumber if you like.

  5. Add ice to each glass and garnish the rim with sliced cucumbers (and mint, if desired). Cucumber also looks nice in the glass not just on the rim.

  • To make Simple Syrup: Boil 1:1 ratio of sugar to water and boil to dissolve on the stove, then chill. Or use agave, honey or â€‹alternative sweetener. Keep it light.
